Bananna and raisin muffins Ingredients: 200 g Self raising flour 85 g Sugar 1 pn Salt 1 Zest of one orange 4 t rapeseed oil 1 Egg 125 ml skimmed milk 2 large ripe bananas, mashed 60 g Raisins Instructions: Preheat oven to 200 degrees Celsius. Line muffin tin with 12 cases. Place flour, sugar and orange zest into a large bowl and mix. In a separate bowl mix together the oil, egg and milk, then pour into flour mixture stirring till combined. Add bananas and raisins till blended. Spoon mixture into cases about 2/3 full.
