Tasty muffins for after swim workout

Ingredients

200 g
Self raising flour
85 g
Sugar
1 pn
Salt
1  
Zest of one orange
4 t
rapeseed oil

Egg
125 ml
skimmed milk

large ripe bananas, mashed
60 g
Raisins

Instructions

  • Preheat oven to 200 degrees Celsius. Line muffin tin with 12 cases.
  • Place flour, sugar and orange zest into a large bowl and mix.
  • In a separate bowl mix together the oil, egg and milk, then pour into flour mixture stirring till combined.
  • Add bananas and raisins till blended.
  • Spoon mixture into cases about 2/3 full. Bake for 20 minutes until the muffins are risen and golden.
